Raw Lightning: The Joy of Living

After a weekend of nothing but fruit, vegetables and wine I woke up with excitement, energy and a joy of living that was virtually unfathomable 2 years ago!!!!

My Daily Veggie Juice

1/2 bag chopped kale

1 bag organic baby carrots

1 large organic cucumber

1 small organic lemon

1 small organic gala apple

1 small organic green apple

1 small piece ginger root

Juice Strain and Enjoy

makes 22-30 oz

It takes me 10 minutes to make this juice from beginning to end, including putting the juicer together and cleaning the parts afterwords. The only ingredients that need slicing are the cucumbers (which I quarter lengthwise and the apples and lemons.

I add water to the pulp and boil for about an hour along with herbs, onion and garlic. Strain and use this broth for an afternoon drink or cook your quinoa in it for dinner!

I buy everything from Trader Joes and am currently using my masticating juicer
